Artisan Cheese Definitions:

 

Raw Milk: A cheese heated below 104F that is aged for a minimum of 60 days before being sold on the market.

 

Farmstead: Cheese that is made from milk from a dairy's own herd right on the farm. There is no imported milk from other dairies in farmstead cheese.

 

Organics: Cheese made with all organic ingredients. The animals are fed all organic grains and hay and no antibiotics or hormones are used.
